A rare cousin of Kombucha, our Jun is a hand-crafted fermented drink, made with the finest green teas and raw honey.

Jun is a healthy drink packed full of prebiotics, probiotics, vitamins, amino acids, antioxidants and much more. It has a lighter, smoother taste without the vinegar tones that are present in Kombucha. As it has been fermented with honey, it is both prebiotic AND probiotic (unlike kombucha). Probiotics introduce good bacteria to your gut, vital for your gut health, and prebiotics are the fuel probiotics need to do their job. In essence, Jun contains double the benefits of kombucha.

We don't think nunc is expensive when compared to other drinks of similar quality, but it is compared to many mass produced drinks. If you want to know why there is a price difference, take a look at the ingredients. The cheap drink will use extracts, flavourings, colourings and be laden with other chemicals. And if the cheap drink doesn't disclose its ingredients, that says it all.

Cheap is rarely better.

This depends on the flavour. Fancy a bit of spice, you can't go past our Chilli Cha Cha, or fancy a hint of spice then try our Tropical Heat. We don't expect people to live every flavour, life would be boring if we all liked the same things, which is why we created the sampler box so you can try them all and see which flavour you do like.

What our drinks all do have in common is that they have been sustainably brewed using natural and real ingredients to craft an insanely refreshing drink. Our drinks are gluten free and never too sweet.

At nunc, our alcoholic kombucha stands apart due to our commitment to authenticity and natural quality. Each step of our brewing process is a testament to this dedication.

1. Dual Fermentation: Unlike traditional kombucha, ours undergoes a unique two-stage fermentation process. We start with organic green tea and raw honey for the initial fermentation, which imbues it with the classic kombucha characteristics. Then, for the alcoholic version, we introduce a second fermentation with wine yeast. This not only develops a light, enjoyable 2.5% ABV but also enhances the depth and complexity of the flavour.
2. Natural Ingredients: We infuse our brews with fruits and herbs, never relying on artificial or natural flavourings, extracts or any chemicals. This means the flavours in our kombucha are genuine, rich, and full-bodied.
3. Local Sourcing: The raw honey used in our fermentation comes from within 5 miles of our brewery. This local sourcing emphasises our commitment to sustainability and community support.
4. Mindful Crafting: Each batch is crafted with attention to detail, ensuring consistency and quality. We believe in mindful production practices, respecting both the ingredients and the process.

These unique aspects of our brewing process not only make nunc’s alcoholic kombucha a distinctive choice but also reflect our ethos of transparency, quality, and mindful enjoyment.

Because we want to be as sustainable as possible, we source our raw honey from bees within five miles of our brewery. We cannot stop the bees from roaming where they like to gather their nectar, pollen and water, and therefore their honey can not be classified as organic. As other brands do, we could purchase organic honey from overseas, but we passionately believe the UK makes some of the best honey in the world (and purchasing from overseas is not sustainable).

Apart from the honey, we use organic ingredients whenever possible. For a few ingredients, the organic equivalent ingredient is inferior in taste to what we use (and we are not willing to sacrifice taste), however we are always searching for the organic equivalent that is equal to, if not superior in taste to what we use.

We never use genetically modified ingredients.

Hard kombucha and hard seltzer are both popular alcoholic beverages in the USA, but they differ significantly in their composition and brewing processes.

Hard Kombucha: At nunc, our alcoholic kombucha would be classified as hard kombucha though nunc is a unique drink, crafted to a lighter alcoholic content of 2.5% ABV. Our alcoholic kombucha is an embodiment of our commitment to natural ingredients and authentic brewing, offering a drink that's both sophisticated and enjoyable.

Hard Seltzer: In contrast, in America hard seltzers are typically made by fermenting cane sugar or malted barley to create alcohol, then flavouring it with natural or artificial flavourings. While they are known for being light and refreshing, hard seltzers don't offer the same depth of flavour or the natural fermentation benefits of hard kombucha.

In the UK, hard seltzers were really nothing more than sparkling water blended with natural or artificial flavourings. They are now more commonly called something like a "vodka soda", but it's still just sparkling water blended with alcohol.

In essence, while both offer a lighter alcoholic option, nunc's hard kombucha stands out for its artisanal brewing process, natural ingredients, and the rich, authentic flavours that come from our commitment to quality and transparency in every brew.

A tiny amount, as most of the caffeine has been naturally removed during the fermentation process.

Unfermented Green tea is naturally lower in caffeine than black tea or coffee. As way of illustration, green tea contains about 35 mg of caffeine per 230ml cup, compared with 39–109 mg for the same serving of black tea, and 95mg in the same serving of coffee (though depending on the coffee drink it can be as high as 500mg). Even decaffeinated coffee contains about 3mg of caffeine. Most of the caffeine has been consumed during the fermentation process but a tiny amount remains.

Our alcoholic range contains no more than 2.5% ABV. It is a lighter choice, for those who want a little buzz without the morning fuzz.

Our non-alcoholic range of drinks contain a trace amount of alcohol which is produced during the natural fermentation process. We thoroughly test our drink to ensure the alcohol level never exceeds 0.5% as per government regulations for non-alcoholic drinks.

No. Our brewery and all of our drinks are 100% free from gluten. None of our ingredients have fillers or binders, and products containing gluten are banned from our brewery. What you see on the label is exactly what’s inside a can of nunc.

This depends on personal preferences. Some vegans will not consume honey and others do. Honey is the cornerstone of our drink.

The raw, unfiltered honey we use comes from local bees (we only use honey that comes from bee hives no more than 5 miles from our brewery, and we prefer to use honey from hobbyist bee keepers). We believe raw, unfiltered honey, responsibly and sustainably sourced, is not only great for your health but it is important for the survival of bees. The more people caring for bees the greater their chance of survival – and we all know the world needs bees.
